Matcha Cookies Recipe

We are going to share with you an amazing recipe for matcha and white chocolate cookies. These are extremely chewy, perfectly dense, sweet, and full of matcha flavor. Honestly, you have to try this recipe—you will love it. This recipe was requested by many of you and I’m sure you’re going to love it. So let’s get right into it.

As in many of my cookie recipes, we are going to start by making our own chocolate chips. I do not like to use pre-made chocolate chips, so I’m just going to chop some white chocolate into nice and thick chocolate chips.

Now we can work on the cookie dough itself. I’m going to start with some melted butter. Yes, this can seem pretty weird to use melted butter instead of softened room temperature butter, but this is just to make our life easier. This way, we don’t have to use any KitchenAid or equipment—just a whisk and a spatula. The melted butter also adds a bit more chewiness to the cookies.

Next, I’m going to add some essential brown sugar and some granulated white sugar. You can use cane sugar as well. Then, I’ll add some pure vanilla extract and mix everything with the whisk until it is nice and combined.

Now, I’m going to add one large egg and one egg yolk, mixing again to make sure that it’s perfectly smooth.

It’s time to work on the matcha tea powder. I’m using pure matcha powder, but I’m not going to add it straight into the cookie dough because we would end up with lumps. Instead, I’m going to create a paste with the matcha powder by mixing it with hot or boiling water.

This ensures that everything is super smooth and full of matcha flavor.

Now that we have this super green and thick preparation, it is time to add even more thickness with our flour. I’m using simple all-purpose flour to which I add some cornstarch—always important when making chewy cookies.

I also add some baking soda and a generous amount of coarse sea salt flakes.

Combining Everything

Once you’ve mixed all of your dry ingredients, add them to your liquid preparation and mix with a spatula until everything is well combined. Now, I’m going to add most of the white chocolate chips to the preparation and mix one more time, leaving a few aside for decoration.

It is crucial to let the dough rest because the butter was melted. Put everything in the fridge for about an hour and a half to two hours. You can do this overnight as well, or if you’re in a hurry, put it in the freezer for about 30 to 40 minutes. You’re looking for a firm and chilled dough.

Our dough is super chilled, so now we shape some cookie balls using our hands and a tablespoon. Place them on a baking dish and let them rest once again for about 15 minutes in the freezer to ensure they are super chilled and firm before baking.

It’s time to bake our cookies. Preheat your oven to 180 degrees Celsius (350 degrees Fahrenheit). Bake the cookies for about 9 to 12 minutes. You are looking for extremely chewy cookies, so do not overbake them.
